Fried rice with broccoli, almonds and chickpeas

In a saucepan boil the Apollo rice in water for 11 minutes. In another pot pour the Ermes red rice in plenty of cold water and cook for 30 minutes from the beginning of the boil. Drain and let both the rice cool down. Wash the broccoli, choose the tops and cook them in the microwave for 8 minutes. In a pan, fry the garlic and add the broccoli, letting them cook for 5 minutes over high heat with a pinch of salt and chili pepper. Add the broccoli, almonds and the drained chickpeas to Apollo and Ermes red rice, add oil and salt, stir well and serve.

  • 150 g of aromatic Apollo rice
  • 200 g of broccoli
  • 100 g of toasted almonds
  • 240 g of boiled chickpeas
  • 2 cloves of garlic
  • chili pepper
  • extra virgin olive oil
  • salt
